A Busy-Night Easy Mexican Casserole

When the end of summer is on the horizon, I switch from laid-back-beach-going mom to organized-get-things-done mom. The fall brings a busier schedule for our family and, as the homemaker, it’s my job to reset and refocus to ensure everyone settles into the new routine comfortably.

With school starting, bedtimes will be earlier, which means I’ve also got to get food on the table sooner. That’s when my organized side kicks in!

A little effort goes a long way, and some simple meal-time planning really takes the stress out of dinnertime. I like to make a shopping list for everything I need the following week, filling our family’s menu in advance with recipes that are easy to prepare.
