Hack: Make Alfredo Pasta Like Your Favorite Italian Restaurant’s

Some might call it a “light bulb moment.” It’s the exact time when you discover some fundamental truth. For me, that moment came last week while I was sitting in my neighborhood Italian restaurant, waiting for the waiter to arrive with my order of Fettucine Alfredo. “Why do I keep doing this?” I thought. Sure, at the end of a long day, the last thing I want is to stand in front of a hot stove for an hour. When I really stopped to think about it, though, the process of dining out isn’t convenient. In fact, it’s just the opposite.

It makes much more sense to take the time usually spent waiting for someone else to prepare my Alfredo, and, instead, get in the kitchen and cook it myself. So, that’s what I’m doing.

These recipes are simple, require little prep time, and the end result is far more flavorful than anything from my local restaurant. Here are my favorite ways to prepare creamy Alfredo.

    In the Fettuccine Alfredo Healthy Living, how do you measure 1/3 cup PHILADELPHIA 1/3 Less Fat than Cream Cheese from a block of cream cheese? This is confusing. I plan to make this and make a judgment call if I do not receive an answer, but truly am interested in knowing this info. Thanks so much.

      Hi Barb, we are very sorry for the confusion. Our HEALTHY LIVING Fettuccine Alfredo Recipe calls for 1/3 cup of our PHILADELPHIA 1/3 Less Fat than Cream Cheese. Many dry measuring cup sets have a 1/3 cup measure. That is what we use to measure softened cream cheese. However, if one is not available, then 5 Tbsp. + 1 tsp. is equivalent to 1/3 cup.
