Some might call it a “light bulb moment.” It’s the exact time when you discover some fundamental truth. For me, that moment came last week while I was sitting in my neighborhood Italian restaurant, waiting for the waiter to arrive with my order of Fettucine Alfredo. “Why do I keep doing this?” I thought. Sure, at the end of a long day, the last thing I want is to stand in front of a hot stove for an hour. When I really stopped to think about it, though, the process of dining out isn’t convenient. In fact, it’s just the opposite.
It makes much more sense to take the time usually spent waiting for someone else to prepare my Alfredo, and, instead, get in the kitchen and cook it myself. So, that’s what I’m doing.
These recipes are simple, require little prep time, and the end result is far more flavorful than anything from my local restaurant. Here are my favorite ways to prepare creamy Alfredo.
This savory recipe comes out of my kitchen ready to eat in only 20 minutes. Featuring reduced-fat cream cheese, fresh Parmesan cheese and a little ground nutmeg (try it, you’ll be surprised!), this dish makes me feel like I’m eating at a five-star restaurant.
Two favorites, pesto and Alfredo, combine for a succulent pasta dish that blends creamy cheese and juicy boneless chicken breast. With each bite, I’m whisked from my table to the picturesque hills of Italy. Deliziosissima!
Preparing a perfectly spicy Alfredo can be tricky. You don’t want the delicate cream to be overwhelmed by the heat of the peppers. This recipe offers the perfect balance between two flavors for a dish I can hardly believe is ready in only half an hour—including prep time!
Because sometimes noodles seem like too much, I love this recipe for zucchini pasta, the perfect meatless, pasta-less alternative. Prepared with fresh lemon, zucchini, garlic and a variety of cheeses, this dish lacks nothing in flavor and substance.
Got 10 minutes? Than you have plenty of time to make a pizza like no other. Thanks to a ready-to-use crust, I can just pop this in the oven whenever friends stop by unexpectedly and I’ve got a crispy, cheesy, meaty pie in no time!
