When I was younger, Thanksgiving was my favorite holiday. Well, it was my secret favorite holiday. As a kid, your favorite holiday has to be Christmas just because of all the toys. In the bottom of my heart, though, Thanksgiving was my favorite. I enjoyed being around my entire family, watching my grandma preparing dinner and my grandfather carving the turkey. One of my most vivid memories is of my grandfather trying an electric knife for the first time. He was like a kid in a candy store. When he cut the turkey tableside, my brothers and I sat in amazement as the tender meat was sliced through like butter. Thanksgiving for our family was an event. My mom would make pumpkin pie, my aunt would make her famous cornbread stuffing, and my uncle would make the best collard greens in the world! But Thanksgiving wasn’t Thanksgiving without sweet potatoes and cranberry sauce. Sweet potatoes are the best thing to eat around the holidays. However, I have one caveat about sweet potatoes: I can only eat them in the fall and with a hearty, comforting meal. It’s something that I’ve come to associate with the holidays. Can you imagine eating sweet potatoes in the summer? I know some people do, but that doesn’t seem right to me. And sweet potatoes aren’t sweet potatoes unless they have marshmallows and a sweet, crunchy topping on them. This, The Easiest Sweet Potato Casserole, is something I know my family will love. It is incredibly easy to make, deliciously sweet and topped with an amazing crunchy topping. What else could you ask for?! What are some of your family’s Thanksgiving favorites?
