Pumpkin pie is my absolute favorite treat during the holidays. Lately, I’ve been brainstorming new ways to enjoy this traditional staple. I thought about making a pumpkin crumb pie, a pumpkin cream pie, a pumpkin peach pie or even a pumpkin sweet potato pie. In the end, I decided to leave the famous pumpkin pie as it is, but with one surprise ingredient added. Usually, I enjoy pumpkin pie topped with a dollop of whipped cream. On the other hand, I enjoy sweet potato pie with marshmallows. So I thought, Why not borrow from sweet potato pie and add a little marshmallow to my pumpkin dessert? Hence, Pumpkin Meringue Pie, a marshmallow and whipped cream combo.
The result is Pinterest-perfect and tastes just as good as it looks. What do you think? Isn’t it a beautifully rustic masterpiece?! I also upped the ante by trading a flaky crust for a crisp graham cracker one. Boy, am I glad I did! It was scrumptiously delicious. No doubt you too will love this pie. It’s simple, classic and yummy. After trying this new take on a familiar recipe, you may never go back to traditional pumpkin pie again!
