The holiday cheer is over. We’ve celebrated the season, raised our glasses of nog and rung in the New Year with gusto. Now that January is here, it’s time to get my eating habits back on track. For this I turn to flavorful, vegetable-packed soup recipes, which is something my mother always loved making.
Having grown up in Vermont, great soup recipes got us through long cold winters. Not only did soups serve as delicious and easy dinner ideas, but also they were warm and comforting. I remember well how my mom would slow-simmer large pots of soup on our wood-burning stove all day long. Wonderful aromas drifted throughout the entire house. Sometimes she followed a recipe, sometimes she just tossed whatever fit her fancy into the pot. Either way, mom’s soups always turned out to be the perfect comfort food.
I now make my home in North Carolina. When winter comes around, I follow in my mom’s footsteps and turn to satisfying soups, like this White Bean & Greens Soup with Smoked Turkey Sausage, for warmth, comfort and good eating. Inspired by one of mom’s favorites, this soup is loaded with white beans, fresh baby spinach and kale. A fabulous jolt of flavor then comes from adding chopped pepperoni and Parmesan cheese. It’s a combination that makes for one very flavorful soup.
