Now that the New Year has started, I’m really trying to stick to my resolutions. One of the most important is for me to spend more quality time with my kids in the afternoon. To make more time, I’m trying to utilize shortcuts and find efficient ways to get chores done during the day, especially dinner.
My best tool for accomplishing this is my slow cooker! My goal is to use my slow cooker at least once a week. It saves so much time. Ingredients go into it in the morning, and it’s all done by dinnertime!
This Slow-Cooker Chicken Taco Soup is one of my family’s favorites. It’s loaded with vegetables and lots of delicious spices. To start this soup, I use boneless, skinless chicken breast tenderloin. If you’d like, use breasts or thighs. Just make sure they’re boneless and skinless.
Next, I add chopped onion, garlic and spices. You could alternatively use a taco seasoning packet or a few tablespoons of homemade taco seasoning. Then, I add all the veggies, tomatoes and tomato paste. Finally, I add some chicken stock and let it cook. It’s as easy as that.
This soup will make your house smell amazing! When it’s done, the chicken will still be whole, so you’ll want to remove the pieces and shred them with a fork. Then, return the chicken back to the slow cooker. To serve, top with cheese and a little freshly chopped cilantro.
