The moment first light shines on Valentine’s Day, my heart just swells with love. I hop out of bed, I smile wide, smooth out my messy hair and greet the day with a song in my heart. Cheesy, I know… But it’s true! The feeling grows as I walk past windows or through store aisles overflowing with Valentine’s Day messages inscribed in cards, plush teddies, and candy. Is Cupid following me? Am I being pelted with love arrows? Who knows? Who cares? LOVE is my jam!
Aside from a sweet evening with my honey, I spend Valentine’s Day and the days preceding it with my little girl, now seven. We spend happy afternoons making what we call “Gooey Hearts Day” crafts or homemade conversation candy hearts. She is a lovely little person, full of joy—if there is anyone who fully personifies love, it’s her. So I thought I’d honor my little girl this Valentine’s Day with these Double Dipped Chocolate Caramel Cherries combining a few of her favorite things: Maraschino cherries, chocolate, and caramel! The chocolate coating is melted with a bit of coconut oil to keep the chocolate soft to the bite and the caramel, drizzled or piped, is a beautifully sweet addition.
Lately, my little girl has taken quite an interest in cooking. With the help of a footstool, she stands next to me and cracks eggs and stirs pots while offering an endless stream of positive reinforcement. This recipe is a fun project for children. They will enjoy dipping cherry after cherry into melted chocolate. They will wait, patiently impatient as the chocolate hardens. When that squeeze of caramel is piped into each cherry, they’ll know it’s time. And the smile as they bite into their first cherry will fill your heart until it’s fit to burst.
