One of my favorite things to do when spring begins to roll around is enjoy brunch recipes with friends and family. There is something special about gathering together for a wonderful meal as nature is beginning to wake up from its winter slumber.
Berries just say spring to me, so they were a must when it came to topping these Coconut Belgian Waffles. I used sliced strawberries sweetened with a little sugar, then I added some lime zest for a pop of freshness and flavor.
I incorporated coconut into these waffles for a fun change to a breakfast favorite. Coconut has a tropical taste that always makes me think of warm weather, so it’s another great flavor addition for a spring brunch menu.
Not only do these waffles have sweet coconut on the inside, they’re also drizzled with coconut syrup and sprinkled with toasted coconut before serving. Toasting the coconut adds more flavor along with a little crunch.
Don’t forget a spoonful of something creamy to complete this delicious dish. I just used a dollop of extra creamy whipped topping. It was the perfect finish to this refreshingly bright breakfast waffle.
