I see the color begin to pop up from tulips, daffodils, and hyacinth and I can feel the earth waking up from its winter slumber. The warm sun beaming on my face is something I’m looking forward to. That’s one of the reasons living in Utah is great: I enjoy experiencing all of the seasons, no matter how short or long they may be. I have to have winter in order to fully appreciate spring when it comes.
At this time of year, I also love to add pops of bright flavor to my recipes. One of my favorite ways to do this is with lemon, like in the Lemon Cream Cheese Coffee Cake recipe I’m going to share with you today. I usually have an entire week full of lemon recipes to share on my own blog—and those are in the works and will be coming very soon—but I just had to share this lemon cake recipe with you now!
This coffee cake definitely has bright citrusy flavor to bring your taste buds out of hibernation. It’s got lemon juice and zest in every single layer, from the cake, to the cheesecake-like filling, to the streusel topping. There’s even lemon juice in the icing drizzled onto this beautiful coffee cake.
Today’s easy lemon cake recipe is a perfect way to start the day. Enjoy it along with some fresh fruit as part of a breakfast, brunch, bridal shower, baby shower or serve as part of any spring brunch buffet. You could even serve it as a dessert to end your day. No matter what you decide, you’ll love this lemon cake.
