I can hear the birds chirping outside, and sunshine is pouring through my office window. Spring is here!
After a long, cold winter, I’m more than ready to finally enjoy sitting on our back deck during my lunch break (I work from home). I like to use that time to relax, refocus and enjoy myself. I deserve a little quiet time, and so do you. And on occasions when you really want to go all out, you can nosh on a slice of this delicious Crumble-Topped Blueberry-Sour Cream Coffee Cake.
First off, it’s simply gorgeous. This is definitely a dessert that you can be proud taking to a family gathering or serving to your friends for brunch. The top is so pretty and crumbly, and each slice reveals a unique pattern of blueberries baked into the moist and fluffy cake.
This beautifully baked coffee cake also tastes absolutely amazing. And that’s really what it all comes down to, right? It’s loaded with sweet, fresh blueberries, and the crumble really sends it over the top! It’s not too sweet so it’s perfect with a cup of coffee or even a tall glass of iced tea.
I am a big advocate of carving time out each day to reflect and care for yourself. It’s so important to give ourselves the same attention that we give to others. As a busy business owner, wife and mother of two young children, I definitely look forward to the 30 minutes I spend each day enjoying a morning break. The fantastic spring weather makes that time even more enjoyable. Oh, and coffee cake—not every time, but it’s such a treat when I do. You MUST try this recipe!
