That’s this BBQ Pork Tenderloin & Sweet Potato Fries in a nutshell. And you only need five ingredients to cook this delicious one-pan wonder!
Since your meat and potatoes sizzle up on one pan, your sweet potatoes caramelize in the sticky-sweet barbecue sauce that drips down the side of the pork tenderloin. I love barbecue sauce for its balance of sweet, salty and tangy flavors as well as its versatility—it can suit any kind of meat, indoor or outdoor. As you can imagine, here in Texas, we do a lot of barbecuing all year round.
Simply grab your pork tenderloin, place it on a large baking sheet, and brush it with barbecue sauce. Chop your sweet potatoes and toss them with olive oil and, if you prefer, some seasonings like cayenne pepper or cinnamon—but use those sparingly, sweet potatoes are packed with flavor already. Surround the pork with the potatoes, and you’re done! Pop it in a hot oven and let the amazing aroma fill your home.
