5 Make-Ahead Casseroles You Need in Your Life

I don’t know about you, but meal planning has saved my sanity on many occasions. You can’t beat the security of having an extra meal (or two…or more) in your freezer for those super-busy weeknights. And with cool weather approaching, I’m stocking up on fall recipes that feed a crowd—because the only thing better than pulling out a pre-made, hearty dinner is having that dinner produce leftover meals for the next day or two.

Enter these clever, simple bakes.

Make-Ahead Unstuffed Shells: Know you’ve got a hectic day coming up? Prep this cheesy pasta casserole 24 hours in advance and stash it in your fridge. A much (much!) simpler version of classic stuffed shells, this breezy bake takes just 30 minutes to prep—and zero minutes on the day you serve it.

fall recipes: Chicken Tortilla Bake

Our Perfect Zesty Chicken Tortilla Bake: “Perfect” is a bold claim for any recipe, true—but these creamy roll-ups make good on that promise. The secret? A cheesy, four-ingredient sauce that’s just as good spooned over the roll-ups as it is mixed with chicken and salsa for a super-easy filling. This perfectly freezable bake serves 8, so tasty leftovers are almost certainly in your future.

Fall recipes: Make-Ahead Chili Cheese Lasagna

Make-Ahead Chili & Cheese Lasagna: One look at the melty yum factor on this two-cheese lasagna and you’ll understand why it’s such a crowd favorite. It’s my favorite because it freezes beautifully for up to two months! If you’d rather not get spicy (or want to get MORE spicy), choose a more or less spicy salsa and adjust the chili powder amount to taste.

Fall Recipes: Make-Ahead Chicken & Green Bean Casserole

Make-Ahead Chicken & Green Bean Casserole: There are two ways to make this delish chicken-and-stuffing casserole ahead of time: You can make it one day in advance and store it covered in your fridge overnight, or you can wrap the casserole tightly in foil and pop it in your freezer for up to two months. (If you’re REALLY planning ahead, try doubling the recipe: You’ll have one to eat now and another to freeze!)

Fall Recipes: Cornbread Casserole with Cheese

Cornbread Casserole with Cheese: Why serve chili alongside cornbread when you can serve it right on top? There’s a trick to freezing this filling casserole: Make just the meat filling, then bag and freeze it for up to one month. When you’re ready to assemble, thaw out the filling and top it off with fresh cornbread batter—then dish it out to 10 lucky people.

Hi, I love your casserole recipes, but they are way too much for me & mom. I have a hard time trying to figure out how to cut a recipe in half. Is there any way you could offer the recipes in half orders or give me some tips on how to do it myself. Thanks and keep them coming. :)

Jennifer- I too love casseroles. But, I live alone. What I do, is I go ahead and make the recipe, then I’ll divide it up into (sometimes as many as 4) smaller casserole dishes. Then, freeze them for easy dinner nights. Just pop them in the oven, and cooking is done! A salad on the side, and it’s a good dinner with leftovers to take to work the next day for lunch!

I’d really like to try the make ahead chicken & green bean casserole but every time I click on the link for the recipe, I get the instructions, but no ingredient list. While I can probably guess on some portions, others … not so much. Please help.
