Super-Simple DIY Green Salsa

At our house, we eat salsa on just about everything: scrambled eggs, tacos, burritos, enchiladas… We even love it on grilled chicken breasts or fish! My kids like mild red salsa, but I’ve always been a green salsa girl. I love that it’s tangy, and I like it with some heat to it. This Homemade Tomatillo Salsa is full of delicious flavor from roasted garlic, tomatillos and Anaheim peppers, and gets its delicious smoky flavor from roasting the vegetables in the oven. I had never made tomatillo salsa before, and I was surprised by how simple and easy it is!

Take Your Taste Buds on a Trip

The wanderlust bug has been biting me BAD recently. And it’s really not the best timing, considering the whole husband-and-three-kids thing…much less the paying-bills thing. Plane tickets are so far out of the realm of possibility that I’m resorting to fantasies of stowing away in oversize carry-ons. (I’m short; I could probably get away with it.) So what’s a girl to do when her heart says “Seoul!” and her wallet says “Seriously?”

I’ll tell you what I’m doing: I’m booking a trip to my kitchen to make my globe-trotting fantasies a reality—food-wise, at least. Because even if I’m not noshing on chicken Florentine in a 19th-century piazza or chicken teriyaki in a bustling Tokyo cafe, I’m still enjoying some awesome eats from the comfort of my kitchen. Back in the swing of fall yet? Are you sprinkling cinnamon on your morning cereal? Me too! It’s the return of cooler weather, falling leaves and knee-high boots. If you’re a parent, fall brings the scent of fresh notebook paper and pencil shavings and, let’s not forget, the morning mad dash to get those kiddies to school on time. My kids are notorious time-wasters—if I had a dollar for every time I’m asked to search for a sock or a shoe (and it’s always right in front of them), I’d be able to retire to some Caribbean island.
