I don’t know about you, but meal planning has saved my sanity on many occasions. You can’t beat the security of having an extra meal (or two…or more) in your freezer for those super-busy weeknights. And with cool weather approaching, I’m stocking up on fall recipes that feed a crowd—because the only thing better than pulling out a pre-made, hearty dinner is having that dinner produce leftover meals for the next day or two. As much as I consider myself a foodie—and I love trying new and exotic foods—there’s something pretty wonderful about a simple and delicious mac and cheese recipe. Mac and cheese is perpetually popular with my kids, but it’s also one of my own favorite comfort foods. At the end of a long day, there’s nothing better than a bowl of cheesy goodness. This Five Cheese Bacon Mac and Cheese recipe is a huge favorite at our house and gets rave reviews every time I make it!
The thought of trading in flip-flops for boots and sand for fallen leaves makes me realize that I’m just not ready for summer to end yet. While there’s nothing that will make the warm, sunny days never-ending (except maybe a move to Southern California?), I can make sure I squeeze every last drop of fun out of festive barbecues, fresh-cut grass, dips in the pool and all the rest. With that in mind, I’m sharing my most unforgettable, all-time favorite Labor Day recipes. They’re a mix of traditional—potato salad, Watergate salad—and new recipes—zucchini fries, peanut butter s’mores bars—and some others in between, but they’re all guaranteed to make this Labor Day the best in recent memory!
Zucchini has been a longtime favorite veggie of mine, but until recently, I never dabbled with adding it to my baked treats. But I came across more than one recipe for zucchini bread lately and I’m all for getting in a little green wherever possible, so this proved a worthwhile kitchen experiment! The shredded zucchini was almost undetectable thanks to the dark cocoa powder and semi-sweet chocolate, though it added a perfectly moist texture to these Double Chocolate Zucchini Muffins.
Do you keep up with your food holidays? No, I don’t mean Thanksgiving or Easter; I’m talking about Blueberry Cheesecake Day (May 26), Pierogi Day (October 8), or, perhaps most important of all: S’mores Day which is August 10th! Sure you could gather around the campfire and cook up the classic, but these require no bug spray! Continue reading
Ripe, juicy summer fruit is bursting from grocery and farmers’ markets these days. Time for me to grab my rolling pin and reach for the pie recipes! The window of opportunity to make desserts from perfectly ripe berries or peaches is brief but glorious, and I’m asking just one thing of you: Take advantage of the bounty while it lasts and make a pie. Any kind! Blueberry pie, double-berry pies, fruit-stuffed hand pies…they’re all amazing. And with the right recipes (*cough* like the ones I picked below *cough*), they can be ridiculously easy to make too.
When it comes to get-togethers I host, dessert is usually an afterthought. Because I’m more of a savory cook than a talented baker, I tend to put all my energy into the main course rather than the sweet ending. However, I’ve finally found a dessert that is both incredibly simple and always delicious: No-Bake Chocolate Layer Dessert. Layers of crumbled chocolate cookies, creamy whipped topping and chocolate pudding stack up to the most popular dish at the potluck! Be warned: It vanishes magically—it’s on the table one minute and gone the next. You will love this super-easy, no-bake summer treat! Continue reading
