Hands down, I give bell peppers the title of best summer veggie. They are so incredibly versatile, and are delicious raw, grilled, roasted or sizzled in a skillet! I use them year-round, but they are at their peak this time of year. That’s why I love canning them as Quick & Easy Hot Pepper Jelly to use later.
As much as I love, love, love the holiday season, I also look forward to packing up the garland and twinkle lights to make way for the New Year. The New Year is a time to refresh and refocus. It’s also a great opportunity to get our eating habits back on track after all of that holiday cheer! With the New Year comes opportunity for a fresh start. I like to take the first few days at the beginning of January to mentally prepare myself for the months ahead. I use this time to think seriously about what I want to accomplish. I then outline goals and formulate a plan. At the top of my list, I prioritize health, diet, and nutrition.
