All-Time Favorite Labor Day Recipes

The thought of trading in flip-flops for boots and sand for fallen leaves makes me realize that I’m just not ready for summer to end yet. While there’s nothing that will make the warm, sunny days never-ending (except maybe a move to Southern California?), I can make sure I squeeze every last drop of fun out of festive barbecues, fresh-cut grass, dips in the pool and all the rest. With that in mind, I’m sharing my most unforgettable, all-time favorite Labor Day recipes. They’re a mix of traditional—potato salad, Watergate salad—and new recipes—zucchini fries, peanut butter s’mores bars—and some others in between, but they’re all guaranteed to make this Labor Day the best in recent memory!

When Zucchini Met Chocolate Muffins

Zucchini has been a longtime favorite veggie of mine, but until recently, I never dabbled with adding it to my baked treats. But I came across more than one recipe for zucchini bread lately and I’m all for getting in a little green wherever possible, so this proved a worthwhile kitchen experiment! The shredded zucchini was almost undetectable thanks to the dark cocoa powder and semi-sweet chocolate, though it added a perfectly moist texture to these Double Chocolate Zucchini Muffins.

Grilled Chicken Breasts Just Got a New Look

Grilling is definitely one of my favorite things about summer! Now that it’s hot outside, I don’t want to heat up the kitchen by turning on the stove or the oven, so grilling outside is the way to go. These Spicy Stuffed Grilled Chicken Breasts are a new favorite dinnertime dish at our house! They are savory and flavorful, with a delicious, spicy filling made of cheese and peppers (my favorite part). They’re quick and easy to make, requiring just a few ingredients.

Eyes on the Pies

Ripe, juicy summer fruit is bursting from grocery and farmers’ markets these days. Time for me to grab my rolling pin and reach for the pie recipes! The window of opportunity to make desserts from perfectly ripe berries or peaches is brief but glorious, and I’m asking just one thing of you: Take advantage of the bounty while it lasts and make a pie. Any kind! Blueberry pie, double-berry pies, fruit-stuffed hand pies…they’re all amazing.
