The thought of trading in flip-flops for boots and sand for fallen leaves makes me realize that I’m just not ready for summer to end yet. While there’s nothing that will make the warm, sunny days never-ending (except maybe a move to Southern California?), I can make sure I squeeze every last drop of fun out of festive barbecues, fresh-cut grass, dips in the pool and all the rest. With that in mind, I’m sharing my most unforgettable, all-time favorite Labor Day recipes. They’re a mix of traditional—potato salad, Watergate salad—and new recipes—zucchini fries, peanut butter s’mores bars—and some others in between, but they’re all guaranteed to make this Labor Day the best in recent memory!
Once the grill gets fired up, some people are happy to eat only burgers all summer long. I’m not one of them. Don’t get me wrong—I love some good hamburger recipes, but ground beef can do so much more than hang out on a bun. I like to mix it up with taco salad, foil-pack stuffed peppers, BBQ meatballs, totchos and more. But each of these recipes is burger-level easy—all are ready in under an hour with 35 minutes of prep or less. So get ready to take your summer cooking to new ground.
I am that mom who is always droning on about the benefits of getting the kids outside, to experience the grass between their toes, the leafy dappled sunlight, the song of the cicadas. (In fact, I drone on as long as the cicadas do, and just as loudly.) So every summer we set up a tent in our backyard, drag out some sleeping bags and…“bamp” out. We spot fireflies, play flashlight tag and grill up savory foil packets on our grill. In the foil-pack dinners here, you cook the rice or stuffing, veggies and protein at the same time in a no-mess packet. Try these, then get even more fired up with the rest of our favorite foil-pack ideas. Click here for the recipe: Foil-Pack Chicken Fajita Dinner Continue reading
Once the summer sun begins to shine, my desire to slave over a hot stove seemingly disappears overnight—and with it goes my will to clean pots and pans. So as soon as the shorts come out, so does my roll of foil. Right now, this Foil-Pack Chicken Fajita Dinner is in heavy rotation, and I’m always on the lookout for new foil-pack ideas.
