Grilling is definitely one of my favorite things about summer! Now that it’s hot outside, I don’t want to heat up the kitchen by turning on the stove or the oven, so grilling outside is the way to go. These Spicy Stuffed Grilled Chicken Breasts are a new favorite dinnertime dish at our house! There’s nothing more satisfying than that first sip of ice-cold lemonade on a steamy afternoon. Unless we’re talking about strawberry lemonade. Or a frozen lemonade slush. Or raspberry-lemonade pie. Or—well, you get the idea. Lemonade is a summer classic for a reason, and I’m taking it to the next level with these twists on an old favorite.
Ready for fireworks? I’m not talking Roman candles, either—I’m talking the oohs and ahhs that will commence when you set down a tray of brightly colored goodies in front of your July 4th guests. And honestly, who can blame them? Desserts too often hide in shades of brown and white (not that I’m knockin’ chocolate, mind you…). But just in time for Independence Day, treats take a turn toward the bright and beautiful—a trend spurred on by the abundance of ripe red and blue berries. So in honor of our nation’s birthday, here are a few of my favorite patriotic treats, including berry-topped mini cheesecakes, a stunning ice cream cake and that grand ol’ showstopper, an American flag cake.
This summer has been ridiculously warm here in the Pacific Northwest. There have been a few weeks when the temperature has peaked at 95 degrees, which is way too hot for a city with few air conditioners. If I had known that this summer was going to be this hot, I would have invested in a pool: inflatable, kiddie, above ground or all of the above. Instead, we’ve been making frequent trips to the various lakes and beaches that surround the city, trying to cool down with frequent splashes in the waves. And a lot of watermelon consumption.
I am that mom who is always droning on about the benefits of getting the kids outside, to experience the grass between their toes, the leafy dappled sunlight, the song of the cicadas. (In fact, I drone on as long as the cicadas do, and just as loudly.) So every summer we set up a tent in our backyard, drag out some sleeping bags and…“bamp” out. We spot fireflies, play flashlight tag and grill up savory foil packets on our grill.
