Crowd-Pleasing Brunch Made Easy

Love ’em or hate ’em, they’re inescapable this time of year. No, I’m not talking about shopping-mall Santas. I mean holiday guests. Extra bedrooms are quickly filling up with parents, aunts, uncles, cousins and friends gathering for celebrations large and small. Personally, I love a full house—though with my husband, kids and new baby, mine’s feeling pretty full all the time these days! With these large gatherings come large meals, and it turns out people need to eat more than just the one big holiday meal. Last year, we learned the hard way that a few boxes of cold cereal only go so far.

An Easy Mexican Casserole for Breakfast Time

Back in the swing of fall yet? Are you sprinkling cinnamon on your morning cereal? Me too! It’s the return of cooler weather, falling leaves and knee-high boots. If you’re a parent, fall brings the scent of fresh notebook paper and pencil shavings and, let’s not forget, the morning mad dash to get those kiddies to school on time. My kids are notorious time-wasters—if I had a dollar for every time I’m asked to search for a sock or a shoe (and it’s always right in front of them), I’d be able to retire to some Caribbean island. A Fall Brunch Casserole You Have to Taste to Believe

Now that we find ourselves heading into the cooler season of fall, thoughts of berries, stone fruit and watermelon are in the past. The produce aisles are filling up with rows of apples—so many different varieties. During this time of year, I love taking a trip to one of the many apple orchards we have here in Washington state and seeing which new varieties each orchard has to offer. The smell of apples frying or baking in cinnamon and brown sugar is one that stirs up so many emotions and childhood memories: The first time I made an apple pie with my mother. The first time my husband, Brent, and I perfected the cinnamon roll. I wish I could bottle up that aroma and wear it as perfume. On dreary days, I’ll fry up some apples, butter, brown sugar and cinnamon and eat them warm with a scoop of vanilla ice cream. It is the pinnacle of comfort food. Continue reading

Brunch…with Bubbles

Time to hit the bottle! No, not THAT bottle—the bottle of seltzer. Everywhere I look, I’m seeing new varieties of sparkling water on the shelves. They beckon me with tantalizing (and increasingly exotic) flavors like “golden peach,” “mountain raspberry,” “key lime” and “pomegranate sangria.” How could I not want to taste those? But how could I find a reason to buy all the flavors I’ve had my eye on? Brunch. Brunch is always the answer. This weekend I’m having some friends over to sample my small collection of upgraded bubbly water and enjoy my favorite better-than-a-restaurant recipes. If you find yourself in the same boat (as if you need a reason to make brunch), here are the dishes at the top of my list …dishes best accompanied by bubbly water.
