End-of-Summer Cucumber Salad

I am fortunate enough to get to dine at some of the finest restaurants out there, and lately I have been finding the chefs featuring melons, especially watermelon, in their salads. With summer providing a bounty in our gardens and in the fresh markets, we have been having a virtual field day with salads: tomatoes and cheese, your typical garden salad and this, quite possibly the best summer salad ever, Cucumber Melon Salad. I took inspiration from those restaurants and combined some baby greens (like spinach and peppery arugula) with the crunchy cucumbers, fresh mozzarella and sweet watermelon. Pasta salad is always one of my favorite dishes to serve at Sunday brunch, take to potlucks, or make for family meals. I love how easy and versatile it is to make. I often just check the pantry and fridge to see what goodness is inside and toss together a pasta salad based on what I can find.
