Bright and Sunny Spring Lemon Cake

I see the color begin to pop up from tulips, daffodils, and hyacinth and I can feel the earth waking up from its winter slumber. The warm sun beaming on my face is something I’m looking forward to. That’s one of the reasons living in Utah is great: I enjoy experiencing all of the seasons, no matter how short or long they may be. What’s crazy is that I grew up eating this ambrosia salad year-round not just necessarily during this season. See, in Mexico this salad is considered a dessert as opposed to in the United States where it’s mostly served as a side dish for Easter and Thanksgiving.
