Sometimes I feel like there are truly just not enough hours in a day. As a work-at-home-mom, I strive to balance my career with my role as a mother, and on certain busy days, finding the time to whip up a warm meal for my family can seem impossible!

On those evenings when I’ve neglected to plan our meal ahead of time, I turn to easy skillet recipes with simple ingredients, like this easy ground beef noodle skillet recipe that I adapted from KraftRecipes.com.

This recipe is so incredibly simple, and I love the spiciness and flavor it offers.

Cinco de Mayo is over, but who says you can’t have a fiesta every day? This easy beef noodle skillet is so yummy!

This dish definitely has a bit of a kick, but it was a still a winner with my picky kids.

In case you’re wondering, yes, you are seeing Ramen noodles in this dish! I have to admit, Ramen noodles are sort of a guilty pleasure for me. I’ve always loved them!

You could certainly substitute whole grain pasta in this recipe if you’re not a fan of Ramen noodles. I would recommend preparing the pasta separately and tossing it into the finished dish in that case.

Easy Beef Noodle Skillet Recipe

Ingredients

1 lb. extra-lean ground beef
1 green pepper, chopped
1 11 oz. can of corn, drained
1 10 oz. can mild diced tomatoes with green chilies
1 cup water
½ cup KRAFT Zesty Italian Dressing
2 pkg. (3 oz. each) ramen noodle soup mix, any flavor
1 cup KRAFT 2% Milk Shredded Mozzarella Cheese

Directions

Brown meat in large nonstick skillet on medium-high heat; drain. Stir in peppers, tomatoes, corn, water and dressing.
Discard flavor packets from soup mixes or reserve for another use. Add dry noodles to skillet. Bring to boil; cover. Simmer on low heat 5 min., stirring occasionally.
Remove from heat. Sprinkle with cheese.
