Flavorful Pesto for your Summer Get-Togethers

A good pesto makes all the difference when it comes to accompanying a pasta salad. Because I have a picky 5-year-old eater in my family, I get creative and find unique ways to incorporate fresh vegetables in all my meals any way possible. By including vegetables in a flavorful pesto, my son thoroughly enjoys every bite of this tasty pasta salad.
This pasta salad is very versatile because it can be served hot or cold during your 4th of July gathering and can be modified to be prepared with your pasta of choice. It makes a great side dish to grilled chicken, meat or shrimp or can be served as the star of the show for a romantic Italian dinner.
If sweet peppers are not available, you can use red, orange or yellow bell peppers. If you prefer your pasta with a spicy kick, use Poblano peppers or jalapeño peppers with veins and seeds removed.
