A Sweet Treat to Beat the Heat

With the cooler temps and the constant rain, it sure isn’t feeling like summer around here. We are taking advantage of every sunny day that comes our way, though, and heading outside to play as often as we can!
I know the time is coming, soon, where I’ll have to drag my kids in from playing simply to grab a snack or eat something. The sweltering Kansas heat will be beating down on us and we will want and need a cool dessert to cool us off! If I’m complaining about the heat come July, remind me of how much I moaned and groaned about the cold temps in May and June, ok?
Our Summer of Fun Bucket List for 2013 included making homemade ice pops! Homemade ice pops are the best no-bake dessert, aren’t they? They are simple to make and portable… kids don’t even really have to stop what they are doing to eat them! And parents? This recipe for Creamy Lemonade Ice pops is even better because it only has 4 ingredients – you can make them and not miss out on the outdoor fun yourselves! Plus, they are pretty adaptable. Add in some blueberries and strawberries and you’d have a great treat for 4th of July with your red, white (light yellow) and blue!

Sweet and Creamy Lemonade Ice pops
A sweet and creamy ice pop recipe using 4 simple ingredients.
Prep Time: 10 minutes
Total Time: 8 hours
Yield: 10 ice pops
4 cups cold water
1 cup COUNTRY TIME Lemonade Flavor Drink Mix
1 tub (12 oz.) COOL WHIP Whipped Topping, thawed
1 Tbsp. lemon zest
Blend together water, COUNTRY TIME Lemonade Flavor Drink Mix, COOL WHIP Whipped Topping, and lemon zest until smooth.
Pour mixture into 10 ice pop molds (I use this ice pop mold) and add sticks. Cover and freeze overnight.
Remove ice pops from mold and serve right away – Enjoy!
