January is often most well known as a month of New Year resolutions, a fresh start (and my birthday) but in these parts, it’s regarded as one of the coldest months of the year. Snow is almost always on the ground, temperatures are well below freezing and the only thing anyone wants to do is cozy up indoors with someone they love and a big, snugly blanket.
For me, it’s the perfect month to cook up my favorite soup recipes, baked desserts and comfort food that my whole family loves. At the top of the list of comfort food favorites is this simple Beanie Weenie Stew recipe. The kids go crazy for any dinner that involves hot dogs and my husband has no complaints when meat and beans are involved.
The best part of this dish for me is the fact that I can cook it on the stove top in 30 minutes or I can toss all the ingredients into the slow cooker and let the flavors mingle for 5-7 hours on low. However you decide to cook it, I highly suggest pairing this dish with some warm buttered cornbread and a side of braised cabbage. Together, they become the perfect warm the tummy comfort meal for the whole family.
