A Patriotic Dessert For Labor Day

There is no shortage of patriotic holidays, just begging me make something in red, white and blue to celebrate the occasion. Whether it be Memorial Day, Independence Day or Labor Day, I never turn down the chance to have a BBQ with family. We like to enjoy items on the grill like cheeseburgers or steaks and serve them up with some deliciously easy salads and sweet corn. But there is no easier way to make a colorful patriotic dish than with dessert. Berries are just such a delicious choice and a good way to enjoy the fruits of the season.

I've been spending even more time on the Kraft website looking at recipes lately. I recently came across this awesome Flat Bottom Fruit Pie. I loved the idea of using a ready-to- use pie crust but I happened to have a left over pastry sheet sitting in my freezer. I thought it would be a great substitute. I also switched out the peaches for strawberries so I could stick with the red, white and blue theme and went with cheesecake pudding to shake things up.

Patriotic Layered Berry Dessert

1 ready-to-bake puff pastry sheet (½ of 17.3 oz. pkg.)
2 tsp. cinnamon sugar
1-¼ cups half-and-half
1 pkg. (3.4 oz.) JELL-O Cheesecake Flavor Instant Pudding
1 cup thawed COOL WHIP LITE Whipped Topping
1 cup fresh strawberries, sliced
½ cup fresh blueberries
½ cup fresh raspberries


THAW pastry sheet according to package instructions.

PREHEAT oven to 400ºF.

UNFOLD pastry sheet on floured surface and slice along the seams to make three equal sized sections. Place on two baking sheets lined with parchment paper or silicone baking sheets. Sprinkle cinnamon sugar over the tops of two of the pastry sheet sections.

BAKE 15 or until a golden brown. Move to wire racks and cool completely.

BEAT pudding mix and half-and-half in medium bowl with whisk for 2 minutes. Fold in COOL WHIP. Refrigerate until ready to use, at least 5 minutes.

SPLIT each pastry into two layers so you have six layers in all. Spread pudding mixture on one layer and top with berries. Repeat layers and continue with second dessert, making sure the two sugared layers are on top.

GARNISH with any excess pudding or COOL WHIP and berries.

TIP: Refrigerate for one hour (or up to four) and use a serrated knife for easier slicing.

Cook time: 15 minutes
Total time: 40 minutes
Serves: 12

I used cheesecake pudding but so many flavors would taste great as well such as vanilla, French vanilla, coconut cream (with a little toasted coconut even), lemon, etc. The possibilities are endless.

My raspberries were huge so I cut them in half as well so they would lay flat and I could spread them out better throughout the layers.

I thought this dessert might be very difficult to cut but I found that by waiting an hour and using a serrated knife, it was actually quite easy. And oh so very tasty!
