Vegetarian Delicacy Inspired by Mexico

June is a month of family gatherings and backyard barbecues. There is lots to celebrate with the fourth of July holiday approaching, summer in full swing and the warm breeze that makes this time so pleasant on beach chairs and baseball stands. We break out our grill, picnic blankets and enjoy lots of carne asada, chicken salads and ice cold aguas frescas in our hand.
Vegetable salads, in particular cactus salads are very popular during our Fourth of July gatherings. Cactus is great for you and gives any dish a tangy flavor that is perfectly paired with melted cheese and any tortilla based dish such as huaraches.
Huaraches are grilled, oblong pieces of masa topped with various ingredients. Many are topped with ground beef, cabbage and sour cream. Others are topped with refried beans, cheese and salsa. This traditional Mexican dish is named after the long leather-thonged Mexican sandal because of the similarity in the shape.
