A Tasty Strawberry Roll-Up For School Lunches

I couldn't even believe my eyes a few days ago when I saw several of my friends posting pictures on Facebook of their children heading back to school. It just seems to be slipping by us so quickly this year. Graham is headed for 1st grade and couldn't be more excited about it. I am thrilled for him, but also sad to see another summer passing us by.

With that said, I am delighted to share with you all this tasty and great school lunch recipe to add to your lunch box round-up. These sweet little roll-ups were inspired by Graham since he loves all things that roll and does not necessarily love strawberries. That's right, a kid who is not a huge fan of them! Well, because they are in season and because my youngest son loves them I didn't want them to go to waste. Graham's biggest issue with strawberries stems from the texture (all those tiny seeds). So, I came up with a solution that even he likes. If you pair these with other goodies in a lunch box you could easily have enough for two days (just cut in half and store in the fridge).

Sweet Strawberry Roll-ups

3 medium sized strawberries
1 Tbsp. PHILADELPHIA Cream Cheese
½ tsp. cinnamon
½ tsp. honey
1 whole wheat tortilla

BEGIN by cutting the tops off of the strawberries and placing them in a bowl with the cinnamon and honey.

MASH the strawberries until they are a puree consistency and mix well using a potato masher.

SPREAD the cream cheese over the whole wheat tortilla and top with strawberry mixture. Roll tightly and cut in half.

There you have it! Easy as can be. I hope this helps you add another new item to your lunch box menu this school year. Make sure to check out the rest of my school lunch ideas.
