November is the start of one of the busiest seasons of the year for me. You're going to find a myriad of Thanksgiving recipes around the Internet, right now, and some of the best will be right here, at Busy-at-Home. As I prepare for the holidays, both at home and here, on the blog, though; it's easy to get so swamped that I don't do as well planning and prepping for everyday meals. The dish I'm sharing with you, today, is my go-to "get-a-great-dinner-on-the-table-fast-and-easy" recipe. It only takes about ten minutes to get it into the oven and then I can easily pull the rest of the meal together while it bakes. It's fabulous with mashed potatoes, but I love it with mashed sweet potatoes, too. A little steamed broccoli or roasted asparagus, on the side, and you have a meal that rivals your favorite home-style restaurant! This chicken is so good you'll serve it to guests with confidence and the recipe will be requested often. As a meal that requires little of your prep time on a busy night, it simply can't be beat! It's comfort food that will draw your family around the table to enjoy conversation, connecting and fun.
