Twice Baked Jalapeno Popper Potatoes are a warm, welcome side dish or a delicious and filling main dish, when paired with a hearty green salad or vegetables. My challenge for February's Kraft Tastemaker recipe was to put a new twist on an old favorite dish and this recipe evolved through a process of decision-making. I love warm, spicy food, year-round, but especially in the cold winter months. One of my favorite, easy-to-make warm, spicy treats is my Jalapeno Popper Dip. I considered "twisting" that a bit to make Jalapeno Popper Nachos, but then decided I wanted something heartier, plus I felt like that wasn't quite "twisted" enough. :)
How could I blend the spicy cheese and bacon goodness of Jalapeno Poppers into a main dish? Well, I came up with several ideas I am excited to try, now, but the one that struck me, for this post, was to incorporate those flavors into a twice-baked potato. I love that it is a simple, quick-into-the-oven dish that could be made for a family weeknight supper without a lot of unusual ingredients and very little effort. I am also excited that this is an easy, make-ahead dish! Prepare them and refrigerate for quick reheat during the week or assemble and freeze them. Pulling out just the ones you will need to bake for that night.
However you decide to prep and use them, you will the love this flavorful, yet simple to make recipe! It's as simple as baking the potatoes and then scooping out the warm, flaky potato insides to mash them with a combination of twice-baked potato ingredients and jalapeno popper ingredients -- butter, PHILADELPHIA Cream Cheese, KRAFT Mayo, smoky crisp bacon, cheddar cheese, Parmesan cheese, panko and more. Remember, you can adjust the heat levels, very easily by adding or subtracting how much of the veins and seeds of the jalapenos you use in your dish. Add or subtract peppers, to suit your family's heat preferences, as well. Enjoy!
