It's officially November, and you know what that means... Thanksgiving recipes ALL DAY, EVERYDAY!
Well, every other day on the blog, but you get the idea. Thanksgiving is one of my favorite holidays; it might even be the best holiday, because it's centered around food. You may have noticed that I like food? ;)
Some of my fondest memories from my childhood stem from Thanksgiving. My mom would always wake up at the crack of dawn to get everything started, and I'd be woken by the warm scent of turkey in the oven. I'd scramble down the stairs, which led straight into the tiny galley kitchen of my youth, and be greeted by my mother and a spoonful of stuffing.
"There's my little taste tester. Want a bite?"
Of course I nodded eagerly and munched away at a casserole-dish of stuffing, and that's how I'd get to have stuffing for breakfast.
That memory made me realize that stuffing for breakfast needed to become an actual thing, and so today I'm sharing with you this Portobello & Parmesan STOVE TOP Stuffing Strata!
Strata is basically just a fancy word for "breakfast casserole" and this recipe comes together in a pinch with only a handful of fantastic ingredients. It's a super simple make-ahead breakfast, as you can make the entire strata and set it in the fridge overnight and just bake it off in the morning.
I gave this strata a bit of an Italian flare, with portobello mushrooms sautéed in olive oil, STOVE TOP Savory Herb Stuffing Mix, and plenty of freshly grated Parmesan cheese.
Oh and a bit of basil, because basil makes everything better.
I've been trying out different strata recipes these past few weeks, and I have to say the key is stale bread. I've made it with fresh, and it just doesn't get as crispy around the edges. The drier bread cubes from the STOVE TOP Mix soak up the egg mixture perfectly, and result in a moist (yet not mushy) casserole.
So whether you need a simple, stress-free breakfast Thanksgiving morning, or end up having an extra box of STOVE TOP around after all the cooking's done, whip up this Stuffing Strata!
