Hello friends! Can you believe it's already September? I feel like I blinked and the summer just went whoosh!
Now that school is back in session, I can only imagine how hectic everyone's days have become. Since I work at a university, the fall is just as busy for me as ever. With that in mind, I decided to share a recipe with you today that is all about a classic comfort food re-vamped into a hearty and simple dish.
I absolutely adored grilled cheese sandwiches as a child. As a matter of fact, I still love them as an adult. They just remind me of fun afternoons spent with my family once I got home from school, or practice, or whatever else was happening that day.
Grilled cheeses are one of those sandwiches that can easily be upgraded with just a few simple adjustments. Throw in some protein, a few flavor-boosters, and some good quality cheese, and you can have these sandwiches on the dinner table in no time!
Plus, you will be the coolest person ever for making fancy grilled cheese for dinnertime. ;)
My version of the upgraded grilled cheese of my childhood is this A.1. Roast Beef, Cheddar, and Caramelized Onion Grilled Cheese. I shredded a large block of CRACKER BARREL Sharp Cheddar cheese, and combined it with some caramelized onions, sliced roast beef, and A.1. Original Sauce to heighten the meaty, hearty flavor.
Trust me when I say that this is a filling grilled cheese sandwich. This one kept me full for hours!
As a young adult who is forever hungry, I'd say that is a job well done, don't you?
You'll be amazed at how just a few simple adjustments to a grilled cheese can take it to the next level. Caramelized onions are super simple (and can be made up to five days ahead of time and stored in the fridge) and blend perfectly with the hearty roast beef, and then the A.1. Sauce takes it over the top. Be sure to use a hearty bread, such as sourdough as well. You don't want any wimpy bread that will crack (or smoosh, I guess) under the pressure of your epic grilled cheese sandwich.
It will indeed be epic, my friends.
