Spring is here! Finally, it was definitely a long time coming this year. Winter just held on forever and it only now is starting to warm up here. I'm so excited to see the sunshine and blue skies that I decided it would be fun to celebrate by making some delicious desserts and I started with simple colorful spring cookies.
Inspired by these shortbread cookies, I decided to adapt the recipe so I could cut them out with spring themed cookie cutters. I pulled some cute flowers and a butterfly cookie cutter out of my baking drawer that I thought would be perfect. I also wanted to make the cookies a bright color but wanted to be creative and use something different to color the dough.
I poked around in my cabinets for a few minutes and a bright pink box of JELL-O Strawberry Flavor Gelatin caught my eye. Perfect!
Now I was ready to start. I made up the shortbread dough and replaced half the sugar with the JELL-O. It turned the dough pink right away and I was really excited. I called Kora & Logan in to help me cut out the shapes. They loved pushing the cookie cutters into the dough and then pulling them back out to reveal the flowers and butterflies.
After we arranged them on the cookies sheets, I popped them in the oven and in 15 minutes we had our brightly colored and fun flavored spring cookies! They turned out delicious and had a fun fruity flavor. This was a yummy recipe that I'd love to make with the kids again and even take into school for a spring party or other event. They are eye-catching, cute, and sure to garner lots of compliments.
Simple Colorful Spring Cookies
Makes 4 dozen
4 sticks of butter, softened
1 cup of white sugar
1 package (3 oz) of JELL-O Strawberry Flavor Gelatin
8 cups of flour
colored sugar for garnish
In a large bowl cream together butter, sugar, and JELL-O until fluffy. Mix in the flour.
Wrap dough in plastic wrap. Refrigerate for two hours.
Preheat oven to 350 degrees.
Place the dough onto a floured work surface and sprinkle with flour. Roll out into a sheet 1/4 inch thick.
Cut into shapes with floured cookie cutters and place 1 inch apart on ungreased cookie sheets.
Place onto cookie sheets and bake for 10-12 minutes until the edges are lightly brown.
I enjoyed this recipe and also can't wait to do more spring baking. I was on the Kraft Foods site recently browsing their recipes and was excited to see a delicious collection of crumbly Peanut Butter Cookies that I can't wait to try.
