As a busy mom, I’m always looking for simple but delicious recipes. I enjoy cooking and baking but I also need to divide up my time between being in the kitchen, blogging, running errands, driving the kids around to their after school activities, and handling other things that randomly pop up like forgotten lunchboxes or helping with a last minute school project. That’s why I like to create easy recipes that take minutes to prepare but can be enjoyed by everyone in the family.
As a Kraft Tastemaker, I was challenged to “Twist That Dish” which means switching up a tried and true favorite. I browsed the Kraft Foods Recipes site and checked out chicken breast and nachos recipes and while they all looked wonderful, I decided to stick with a family favorite and use KRAFT Macaroni & Cheese.
I wanted to find something to mix in the mac & cheese that we could do easily and on a regular basis. I started thinking about other favorite foods that we all enjoy and meatballs immediately came to mind. I often pick up frozen meatballs from the grocery store and love how they are ready in minutes and taste delicious, so I knew it would be a good combination and decided to make Easy Meatball Mac & Cheese. I made the KRAFT Macaroni & Cheese by following the directions on the box. I heated the meatballs in the microwave by following the directions on the bag. When they were both ready, I dished up the mac and cheese and topped it off with a serving a meatballs.
It was a huge hit and the kids were so surprised. It’s so funny how excited they get about the little things in life like this and it made me happy that they enjoyed it so much. This was a super simple dish that we will be making again and again and is now one of our go to dishes when we are crunched for time.
