what you need
- 4 cups extra virgin olive oil
- 4 lg. cloves garlic
- 8 fresh basil leaves
- 2 sprigs fresh sage
- 1 sprig fresh oregano
- 2 sprigs fresh parsley
- 2 sprigs fresh thyme
- 1/4 cup roasted pine nuts
- 2 Tbsp. grated parmesan cheese
- 1 Tbsp. salt
- 1/2 Tbsp. black pepper
- Pinch cayenne pepper

Combine half of the ingredients in a blender and chop. Repeat with remaining ingredients & blend two amounts together. The mixture should be chunky and green.
The oil will keep at room temperature for three days, up to two weeks if refrigerated.
Pour into small cup or dish and serve as a dip for Focaccia bread.
Notes
I usually make just half the recipe for this flavorful dipping oil for our own personal use, but it can also be packaged in decorative cruet bottles and given as a gift from your kitchen to friends.
