- Olive oil
- 1/2 cup bread crumbs
- 1/4 cup grated parmesan cheese
- 2 Tbsp. Italian herbs
- 1/4 cup milk
- 1 lb. boneless skinless chicken cutlets
make it
Preheat 1 Tbsp. olive oil in nonstick skillet over medium-high heat. Mix bread crumbs, cheese, herbs, and 1 tsp. (more or less to make SLIGHTLY moist) olive oil to make crumb coating for chicken.
Dip chicken in milk, then in crumb mixture to coat.
Fry 1 or 2 pieces of chicken until golden brown (2 minutes), then flip and cook until done (2 minutes more). For each batch of chicken, add another Tbsp of oil to the pan.
Notes
Boneless skinless chicken breasts pounded thin can also be used, but may require a slightly longer cooking time.
For a more substantial breading, dip in a mixture of 1 beaten egg and 1/4 cup milk, instead of plain milk, before coating in crumb mixture.
