Sweet Potatoes in Orange Cups

what you need
- 6 sweet potatoes - unpeeled
- 1/2 stick butter
- 1/4 cup orange juice
- 1/4 cup chopped pecans
- 1/4 cup crushed pineapple, drained
- 4 slices crisply cooked bacon, crumbled
- 6 large thick skinned oranges
make it
Cook and cool sweet potatoes. Scoop out potatoes into bowl. Mix in rest of ingredients except oranges.
Cut oranges in half and scoop out pulp and save for another use. Place sweet potato mixture into emptied orange halves.
Bake at 375 degrees F for 1 hour or until mixture is heated through.
Notes
Ice cream scoop works well for placing mixture into orange cups.
It can be topped with a few mini marshmallows if desired.
