- 2 1/2 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1 cup margarine, softened
- 1/4 cup granulated sugar
- 3/4 cup firmly packed brown sugar
- 1 package (4 serving size) Jell-O Butterscotch Flavor Instant Pudding
- 1 teaspoon vanilla
- 2 eggs
- 1 pkg. (12 oz.) cinnamon morsels
- 1 cup chopped nuts (optional)

- 1/2 cup granulated sugar
- 1 teaspoon cinnamon

Mix flour with baking soda and cinnamon. Combine margarine, the sugars, pudding mix, and vanilla in large mixer bowl; beat until smooth and creamy. Beat in eggs one at a time. Gradually add flour mixture; then stir in morsels and nuts (batter will be stiff). Refrigerate for 1 hour.
Roll 1 tablespoon dough for each cookie, into a ball, and shake in mixture of 1/2 cup sugar, and 1 teaspoon cinnamon. Place 2 inches apart on ungreased cookie sheets.
Bake 375 degrees F for 8-10 minutes. Remove to wire racks to cool. Store tightly covered.
Notes
This recipe can be varied, with the Jell-O Pudding being used. Chocolate pudding and chocolate chips, vanilla pudding, with raisins. Leave out the cinnamon for the other flavors, and roll in plain sugar. The cinnamon variety reminds me of snickerdoodles. These cookies turn out soft, not crispy.
