what you need
- 2 large onions
- 2 large celery ribs, chopped
- 1 large green pepper, chopped
- 3 cloves garlic, minced
- 2 pounds (90%) ground beef
- 1 cup fresh whole wheat bread crumbs (about 2 slices)
- 1 egg
- 1/2 teaspoon pepper
- 2 cups chopped canned tomatoes in puree
- 1/4 cup ketchup
make it
1. Preheat oven to 350 degrees F. Lightly coat 13x9-inch baking dish and large nonstick skillet with cooking spray. Set skillet over medium high heat. Saute onions, celery, green pepper, and garlic until soft, about 5 minutes. Transfer vegetables to large bowl. Add beef, bread crumbs, egg, and pepper to vegetables in bowl and mix with your hands. Combine tomatoes and ketchup in small bowl. Add half to meatloaf mixture, and mix again.
2. Transfer meatloaf mixture to baking dish and shape into a loaf about 10 inches by 7 inches, mounding slightly in the center. Make lengthwise groove down center and pour remaining tomato mixture into groove.
3. Bake meatloaf until instant read thermometer inserted in center reaches 165 degrees F, about 75 minutes. Let stand 10 minutes before slicing.
Notes
This can be cut in half very easily. Makes great cold meatloaf sandwiches.
