what you need
- 2 1/2 pounds potatoes
- 4 whole eggs
- 2 tablespoons flour
- 1/2 tablespoon salt
- 1 tablespoon onions,- grated
- 1 whole granny smith apples, minced fine
make it
(1) Grate potatoes and squeeze out moisture. Beat eggs and add to potatoes. Sift flour and salt into mixture. Add onion and apples.
(2) Spoon prepared pancake batter onto griddle or large skillet to form 3 inch pancakes.
(3) Cook until done. Repeat using remaining batter.

Make 3 inch pancakes.
