what you need
- 1 lb. ground beef
- 4-6 oz. Velveeta cheese
- Instant potatoes or leftover mashed potatoes
- 1 can of corn, drained
- 1 small can of mushrooms, drained
- Spices to taste
make it
Brown ground beef and drain. Cut up Velveeta into chunks. Fix instant potatoes according to instructions (or thin refrigerated leftover mashed potatoes with 1/4 cup milk in a saucepan).
Preheat oven to 350°F. In a 9x13-inch pan put ground beef, corn, mushrooms, and Velveeta. Mix and then cover with mashed potatoes.
Cover and put in oven for 10-15 minutes or until warmed throughout and cheese is melted.
Notes
This recipe is very versatile; you can use sausage or ground turkey in place of the ground beef. You may also use peas or mixed vegetables. My family loves cheese so I put mozzarella cheese on the top after it comes out of the oven.
