- 4 eggs, beaten
- 2 tsp. salt
- 2 and 1/2 cups flour, sifted

In a large bowl combine beaten eggs and salt. Add flour gradually until dough forms. Knead for 5 minutes on a floured board or table.
Roll out dough to a 1/8-inch-thick square. With a greased knife or pizza cutter, cut into 1/2 inch wide strips or smaller. Cut in half if desired. Place strips on wax paper and let stand 1 hour or longer.
Drop strips into 3 quarts of boiling salted water. Cook for 10-15 minutes until done as desired.
Notes
We like to use 3 cans of chicken broth. The flour will thicken the broth. This is a great side dish. I also use this recipe in chicken noodle soup from scratch.
