what you need
- 5-6 med size potatoes, quartered
- 1 lg onion, slice or quarter
- 1/2 bag frozen carrots (crinkle cut or baby)
- 1 can (14 oz.) stewed tomatoes, plain or flavored
- 1 can (15 oz.) corn
- 1 can (14 oz.) salmon
- Season with salt, pepper and/or garlic salt
make it
Have pot with water just boiling ready. Peel, wash and quarter potatoes, add to pot. Add onion, carrots, tomatoes and corn.
Cook till potatoes are almost done, add salmon.
Simmer on low till potatoes are tender.
Notes
Adjust amount of ingredients depending on size of family, letting simmer as long as desired, with soups the longer the better. My mom fixed this favorite for many years and she always fried up some cornbread loaded with onions to go with it. Now I fix it for my family, and of course I don't leave out the cornbread, on a cold day there is nothing like it.
