Barney's Beef Barley Soup

what you need
- 1 lb. ground beef
- 1 medium onion, sliced or diced
- 2 cups cold water
- 1 can (14 oz.) stewed tomatoes, cut up
- 3/4 cup sliced carrots
- 3/4 cup sliced mushrooms
- 1/2 cup quick or pearl barley, uncooked
- 2 cloves garlic, minced
- 1 tsp. dried oregano
- Salt & pepper
- 1/2 lb. Velveeta Cheese, cubed

Brown meat and onion in a large skillet and drain.
Stir in water, tomatoes, carrot, mushrooms, barley, garlic and oregano. Bring to a boil. Cover and reduce heat. Simmer 10 min. or until barley is tender. Season (salt and pepper) to taste.
Remove from heat and stir in Velveeta Cheese spread until melted.
Notes
Variations:
1. Substitute Velveeta Mexican Cheese Spread for regular Velveeta
2. Substitute a can of Italian flavored or Mexican flavored diced tomatoes instead of the stewed tomatoes
3. Substitute 1 1/2 cups of your favorite frozen vegetables for the carrots and mushrooms
