what you need
- 8 - 10 Roma tomatoes
- 4 tomatillos
- 1 fresh jalapeno pepper
- 1 medium purple onion
- 1 small can whole kernel corn, drained
- 1 large can black beans, rinsed and drained
- 2-3 cloves garlic (or as much as you like)
- 1 large bunch cilantro (the more the better)
- Salt and pepper to taste
make it
Chop Roma tomatoes, tomatillos, jalapeno pepper and onion very small and toss together in large container.
Rinse and drain corn and beans, add to tomato mixture. Add garlic, cilantro, and salt and pepper, toss thoroughly.
Let sit for at least one hour in refrigerator (or overnight) to get full flavor. Serve with tortilla chips.
Notes
I use a small food chopper to chop onion, garlic, and jalapeno pepper, but I do the tomatoes and tomatillos by hand, so as to get a chunkier salsa
This makes a mild salsa, but can be made into a hot salsa by simply adding an additional jalapeno pepper (or 2 if your daring!)
