what you need
- 4 medium-large ripe red tomatoes
- 1 cup chopped fresh red onion
- 1 bunch fresh cilantro
- Juice from 1 small lime
- 1 habanero pepper (optional)
- Salt
make it
Clean tomatoes and dice into small chunks. Put in medium metal bowl. Chop red onion and add to tomato chunks. Remove stems from cilantro, chop leaves and remaining small stems, and add to onion tomato mixture.
Squeeze entire small lime juice over vegetables and mix. Salt to taste. For real hot salsa, wearing gloves, slice 1 habanero pepper in half, leaving seeds. Add to salsa and marinate. Do not eat habanero halves!
Refrigerate until chilled. Serve with large tortilla chips.
Notes
This salsa is also great over steak, chicken and burgers.
