what you need
- Wooden skewers
- Juice of 1/2 lime
- 2 tablespoons vegetable oil
- 1 cup soy sauce
- 4 tablespoons brown sugar or honey
- 3 ginger root slices (size of a quarter), chopped
- 2 tablespoons cilantro, chopped
- 3 cloves garlic, chopped
- 4 tablespoons saki, or dry white wine, or rice wine vinegar
- 2 pounds chicken thighs (bones & skin removed), cut into 1" pieces
make it
Soak wooden skewers in cold water for a minimum of 30 minutes to prevent burning.
Mix all ingredients thoroughly (except chicken). Add chicken and marinate for 2-3 hours in refrigerator.
Thread chicken pieces onto skewers. Boil marinade to use for basting. Grill on BBQ (preferred method), basting frequently with marinade until chicken is done (approximately 15-20 minutes).
