Healthy Pork Chops with "Gravy"

what you need
- 1 Tbsp. olive oil
- 2 cups fresh mushrooms, sliced
- 1 medium shallot
- 1 clove garlic, minced
- 6 thin boneless pork chops
- Salt and pepper to taste
- 1 can fat-free cream of mushroom soup
make it
Pour oil into large saute pan. Add mushrooms, shallot, and garlic and saute until mushrooms are tender and shallot is translucent, about 4 minutes. Remove mushroom mixture from pan.
Season pork chops with salt and pepper on both sides. Sear chops on medium high heat, about 2 minutes on each side.
Return mushroom mixture to pan with chops. Add 1 can undiluted fat-free cream of mushroom soup. Simmer for about 5 minutes, covered. Serve with rice or potatoes.
