what you need
- 1 box yellow cake mix
- 1/4 cup brown sugar
- 1 1/4 cups water
- 1/3 cup vegetable oil
- 3 eggs
- 1 bag caramels
- 1 bag chocolate chips
make it
Preheat oven to 350°F. Make cake batter according to the box, or use your favorite yellow cake recipe. Take out your cupcake pan and put the paper linings in. Next take a spoon and put a small amount of batter on the bottom of the lining. There should be enough to cover the bottom evenly.
Stick into the oven and check on it every so often. When it appears as though the batter has 'puffed' up about half way take it out and deposit half of a caramel into one. If the caramel does not sink then go ahead and put the half of the caramels into the cupcakes. Pour more batter on top of the caramel and let it bake until golden brown.
Stick about a cup of chocolate chips in the microwave on high for about 30 seconds. Heat as needed and spread melted chocolate on cupcakes. Eat warm.
Notes
When you serve these cupcakes make sure they are hot. Caramel in the center will become chewy again if cold, unless you prefer it cold. When eating beware of the caramel because it can become hot. Remember to wait until the batter is puffed up to add the caramel otherwise it will sink to the bottom.
