what you need
- 1 stick lightly salted butter
- 1/2 tsp. crushed basil
- 1 tsp. parsley flakes or fresh chopped parsley
- 1/4 tsp. oregano
- 1 lb. jumbo shrimp cleaned and deveined (frozen cooked are ok)
- 1 lb. fresh sea scallops
make it
In a small sauce pan add butter, basil, parsley and oregano. Melt over medium heat. Once liquefied take off heat and let cool until just warm.
Pour butter mixture in a large bowl and add shrimp and scallops. Refrigerate for 30 min.
While waiting, heat up gas or charcoal grill. When temperature is medium add shrimp and scallops. Cook for 5 minutes on each side. Enjoy.
Notes
When cooking shrimp and scallops on a grill it is always better to have a perforated tray which can be bought in many department stores or home improvement stores. This way you don't lose the shrimp in between the grates. Also put your scallops on the hotter part of the grill as they take a little longer to cook.
This goes good with thin sliced potatoes cooked with thinly sliced onions in garlic butter.
